Applesauce Cake
Ingredients
1 cup raisins
1 cup applesauce
1 cup sugar
1/2 cup butter
1 cup chopped nuts
1 1/4 cup flour
1 tsp cinnamon
1 egg
1/2 tsp salt
1/2 tsp ground cloves
1 tsp baking soda
Directions
Measure out raisins. Pour boiling water over raisins to cover. Let stand for ~5 minutes. Drain away water. This softens the raisins and makes them much more juicy.
Measure out applesauce. Heat until warm.
Preheat oven to 350 degrees.
Blend together sugar and butter. Beat in egg. Sift together dry ingredients. Add to butter/sugar mixture. Beat in heated applesauce, raisins and chopped nuts. Pour batter into a greased 9x9 pan. Bake for 45 minutes or until toothpick comes out clean.
