Pumpkin Spice Cake

Ingredients

Cake

2 cup all-purpose flour
2 tsp baking powder
1/2 tsp salt
1/4 tsp baking soda
1/2 tsp cinnamon, ground
1/4 tsp cloves, ground
1/2 cup butter, softened
1 1/2 cup sugar, brown, packed
2 eggs
3/4 cup pumpkin, solid-pack
1/4 cup buttermilk
3/4 cup pecans, chopped
1/2 1/2 raisins

Cream Cheese Frosting

2 pkg cream cheese (8 oz), softened
1/3 cup butter, softened
1 tsp vanilla extract
2 cup powdered sugar

Directions

Preheat over to 350 degrees. Grease two 8 inch round cake pans. Place a round of wax paper in bottom of each pan; grease the wax paper. Set prepared pans aside.

Sift together flour, baking powder, salt, soda, cinnamon, and cloves. Set aside. Beat together butter and brown sugar in large bowl until well blended. Add eggs and beat on low speed until light and fluffy. Combine pumpkin and buttermilk in small bowl. Alternately beat flour mixture and pumpkin mixture into butter mixture, beginning and ending with flour. Stir in pecans and raisins. Pour batter into prepared pan.

Bake in preheated oven for 25 to 30 minutes or until done. Cool in pans on wire rack for 10 minutes. Then turn out of pans on wire rack to cool completely. Place 1 cake later upside down on cake plate. Spread top with 1/2" layer of cream cheese frosting. Please the remaining cake layer on top, flat side up. Frost with the remaining frosting.

Cream Cheese Frosting

Beat together cream cheese, butter, and vanilla in medium size bowl until smooth. Carefully add sifted powdered sugar, beating until smooth.
