Zucchini Bread
Ingredients
1 1/2 cup flour
1/8 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
1 1/2 tsp cinnamon, ground
1 egg
1 egg white
1/2 cup oil
1 cup sugar
1 tsp vanilla extract
2 cup zucchini, shredded
Directions
Preheat oven to 350° F.
Combine flour, baking powder, baking soda, salt, and cinnamon in a bowl. Set aside.
Mix together egg, egg white, oil, sugar, and vanilla in a separate bowl. Mix in zucchini.
Combine flour mixture and mix thoroughly.
Grease baking pan with butter or cooking spray.
Loaf: Makes 1 loaf. Bake for approx. 1 hour.
9 x 9 Pan: Bake for approximately 25 minutes.
Yields
Muffins: Makes 12 muffins. Bake for approx. 25 minutes.
Mini-Muffins: Makes 36 mini-muffins. Bakes for approximately 15 minutes
