Banana Bread
Ingredients
2/3 cup sugar
1/4 cup butter, softened
1 egg
2 egg whites
1 cup ripe bananas, mashed, approximately 3 large bananas
1/4 cup water
1 2/3 cup all-purpose flour
1 tsp baking soda
1/4 tsp baking powder
1/2 tsp salt
Directions
Preheat oven to 350° F. Grease loaf pan.
Combine flour, baking soda, baking powder, and salt in a bowl and mix well. Set aside.
Beat sugar and butter in medium bowl, scraping bowl constantly until light and fluffy, about 30 seconds. Beat in egg, egg whites, bananas, and water on low speed until well blended, about 30 seconds. Stir in remaining ingredients just until moistened.
Pour into loaf pans about 1 to 1½ inches thick.
Bake until wooden pick inserted in center comes out clean; approximately 45 minutes. Loosen sides of loaf from pan; remove from pan. Cool completely before slicing.
For 2 loaves bake for 30 minutes, or for muffins bake for 20 minutes.
